1. What is the minimum internal cooking temperature for poultry?
165°F (74°C) for one second (instantaneous) — the highest required cooking temperature, also used for stuffing and stuffed foods.
2. What is the temperature danger zone for food?
41°F to 135°F (5°C to 57°C). Pathogens grow quickly in this range — limit a food's total time in it to four hours.
3. When must a food handler wash their hands?
Before starting work and after anything that contaminates them — using the restroom, handling raw meat, touching the face or hair, taking out trash, or handling money. Proper handwashing takes at least 20 seconds.

What's the difference between Food Handler and Food Manager?

Food Handler is entry-level training for frontline staff; Food Manager (often the ANAB-CFP Food Protection Manager) is a more advanced certification for supervisors, covering HACCP and active managerial control.

What score do I need to pass?

The ServSafe Food Handler and Manager exams typically require 75% to pass. Confirm current requirements with your provider.

How long is a ServSafe certification valid?

It varies by jurisdiction and employer — Food Handler cards are often valid about 3 years and the Manager certification about 5 years. Check your local health department.

Is this the official ServSafe certification?

No. Paratissimus is exam-preparation study material. The official ServSafe certificate is issued only through the National Restaurant Association's ServSafe program and an approved proctored exam.

Is it aligned to the current Food Code?
